I’ve released a new product–toast caramels.
I’d describe the previous caramels shiny and snappy. Instead of stretchy, they were more firm and pliable. They were leaner and carried fruit flavors well. My favorite were the raspberry or the mango-lime!
Toast is a new flavor I made to describe the flavor of toasted milk. They are stretchy and rich, milky and complex.
I made Toast with the intent of making white rabbit candies. So in the same vein, Toast is creamy and milky, but the toasted effect brings out a savory nuance. Originally I was chasing the idea of milk caramel, but I couldn’t get the candy to temperature without burning the milk solids. I ran some other candy tests but came back to this version because I came to prefer the texture of these soft, stretchy candies with a flavor more similar to brown butter than sweet milk.
Year of the Snake Box
The box was designed by 1%talent. I asked for a box that celebrated the new year because at the time I was thinking the candy would be more like White Rabbit. He went for a zingy, energetic snake surrounded by red branches to reference the Wood Snake, which is 2025’s zodiac animal. I love all the details, and I hope you will be delighted as well!
